Blueberry Lemon Bars!

Chef Hallie and I made these recently and they are so refreshing and make a perfect summer treat. The colors are vibrant and bold and yes, they taste as good as they look! If you’re local to Charleston, we picked our blueberries fresh on Hallie’s birthday at Champneys Blueberry Farm. They have the BEST blueberries and it’s so fun to pick them yourself. Check them out while they are still open!

We always like to re-name our recipes and for this one with the bright pinkish color and the sandy look of the bar itself, we came up with ‘Sunset at the beach bars’

Recipe:

Ingredients:

1 cup of fresh blueberries

Zest of 1 lemon

Juice of 1 lemon-(should be about a 1/4 cup)

1 Egg

1 cup all purpose flour

1/4 tsp. baking powder

1/4 tsp. salt

3/4 cup sugar

1/2 cup unsalted butter

Here’s whatcha do:

Line 8×8 baking dish with parchment paper leaving a bit of it as an overhang to lift them out of dish.

-In a large bowl, stir together flour, baking powder and salt. Set Aside.

-Beat softened butter, sugar and lemon zest for 2 minutes. Electric mixer!

-Add Egg and mix to combine

-Add flour mixture and mix well.

-using a spatula, fold in blueberries.

Spread mixture in the prepared dish and bake at 350 for 30 minutes.

 

As they cool, make your vibrant colored GLAZE!

Ingredients: 

1 heaping tsp. frozen blueberries-(frozen is what gives the vibrant color, but use fresh if needed)

2 tbsp. lemon juice-bottled

1 cup powdered sugar

I used our blend jet to pulse the frozen blueberries and lemon juice together. Strain into a bowl and mix little by little with your powdered sugar. It will turn bright magenta and should be spreadable but not too runny. If too runny, add more powdered sugar.
